Roasted Garlic Focaccia

Focaccia is a flat oven baked Italian bread which may be topped with herbs or other ingredients. The dough is the same as of pizza....I have been thinking for a while to make this beautiful bread.....and when I saw it in the blog ,I could not resist myself from making it...

I have tweaked the recipe a bit .....Instead of making herb oil , I have made roasted garlic oil as I didn't had  all those herbs at hand .....And I have used all purpose flour instead of bread flour...But the result was amazing ...The bread was so soft and had a nice crust...


Ingredients


For the roasted garlic olive oil

Roasted garlic cloves-4-5
Extra virgin olive oil- 1cup


For the bread

All purpose flour-3 cups
Salt-21\2 tsp
Sugar-1\2 tsp
Yeast-11\2 tsp
Luke warm water-11\2 cups
6-7 pods of roasted garlic
Extra virgin olive oil-1\4 cups and 1 tbsp
Cherry tomatoes-5-6(halved)
Onion-1\4 (sliced)
Mozzarella cheese- 3 tbsp


Method of preparation



Add the oil in a pan
Add chopped garlic cloves
Simmer for 10 mins
Strain
keep aside


In a bowl , add water , yeast and sugar and leave for 3-4 minutes
You will see the formation of foam on top
That means your yeast is active
In a bowl, add flour, salt, 4-5 cloves of chopped roasted garlic, 1\4 cup olive oil and knead with yeast water for 5-7 minutes and make a ball
Oil another bowl with 1 tbsp olive oil and keep the dough in it
Cover with a cling film and keep in a warm place for 1 hour
Your dough will double in size
Brush a pan with olive oil
Punch the dough and spread the dough in the pan
Keep covered for another hour
Preheat the oven at 350 F
Top the focaccia with cherry tomatoes, onion, mozzarella cheese and roasted garlic cloves
Bake for 30 -32 mins till a tooth pick comes out clean
Serve hot with the oil
