Khade Masale Ka Chicken


It's time for another blog hop Wednesday....This event is started by Radhika of  Tickling Palates ..... For this week I had to visit  http://nishaskitchen.blogspot.com/  by Nisha....Its a beautiful blog with lots of Indian recipes......I chose to make Khade masale ka chicken from her collection....


I was myself planning to post this recipe sometime soon and when I saw it on her blog , I had an excuse.....My dad makes this chicken all the time and I had learned to make it from him.....I have tweaked Nisha's  recipe a bit....Do try this recipe...This is a winner....



All you need is

Chicken-600gm
Oil-5 tbsp
Bay leaves-3
Cinnamon stick-2 inch piece
Black cardamon-4
Cloves-4-5
Javitri- 1 flower
Onion- 4-5(thinly sliced)
Ginger- 2 inch piece
Garlic-15-20 cloves
Curd- 4 tbsp
salt
Whole red chilies-8
Red chili powder-1 tsp
Turmeric powder- 1\2 tsp
Garam masala-1 tsp





Method of preparation

Take oil in a pan
When the oil is hot, add bay leaves and whole red chilies
Add cinnamon stick, cardamom, cloves and javitri
Fry for a minute
Add onion in the pan and fry for 3-4 minutes
Add ginger and garlic and fry for another 3-4 minutes
Add chicken, curd, red chili powder, salt, garam masala and turmeric powder
Add 1\2 cup water and cover and cook till oil separates and chicken is done
Keep stirring in between
Garnish with fresh coriander

Shredded chicken in Spicy Indian Sauce

This dish was born after I failed in my attempt to make KFC style chicken...:(....I saw the recipe on the cover of a cornflakes box and gave it a try...But both of us didn't liked it...And it  was a lot of chicken which I would not have liked to trash...I had no other alternative for the dinner and was thinking for a quick fix...


So I just removed the flour and cornflakes cover from the chicken legs and pulled out all the flesh and made a spicy onion tomato gravy to add to it...It turned out wonderful....Instead of eating it with roti , we stuffed it inside the burger buns...

All you need is

Chicken legs-6
Butter- 1 tbsp
Oil-3tbsp
Onion-2(sliced)
Ginger garlic paste-1 tsp
Tomato-2(chopped)
Coriander powder- 2 tsp
Red chili powder- 1 tsp
Turmeric powder-1\2 tsp
Garam masala-1\2 tsp
Chaat masala-1\2 tsp
Fresh coriander- 3tbsp
Lemon juice- 1 tbsp


Method of preparation

Brush chicken legs with butter and salt and cook in oven for an hour at 350 degrees
Take out all the flesh from the legs
In a pan, add oil and when the oil is hot , add onions
Fry till golden brown
Add ginger garlic paste and fry for 3-4 mins till the raw smell is gone
Add the dry masalas and salt and fry till oil comes out
Add tomato and again cook for 3-4 minutes
Add chicken and mix well
Cook for another 2 minutes
Garnish with fresh coriander
Sprinkle lemon juice on top
Serve hot

Biscuit Pudding


We had a few guests coming over at our place this weekend....So I made this pudding which is very easy to make and can be made a day ahead.....


All you need is

Parleji biscuits-60
Mixed fruits-4 cups(chopped).I used banana, apple, strawberry, kiwi and orange
Whipped cream- 6 cups
Milk- 2 cups

Method of preparation

Dip half of the biscuits in milk and arrange in a dish to make two layers(dip one by one)
Spread half of the cut fruits on top
Spread 3\4 of the cream on top
Repeat the same process
Smoother the cream on top and garnish with sprinkled coffee and fruit slices
Make at least 4-5 hours ahead and serve chilled

Bread Knots

After we came  to the US, this was probably the only weekend when we were not going anywhere....There are so many things to see around LA and because we are here only for a very short period,  all our weekends were booked....



So I thought of making these knots...These are very easy to make but you have to be really patient....Give the dough enough time to mature and you get these soft and chewy knots....All the ingredients were available in my pantry ,so it was just a matter of few minutes to do the dough...

All you need is

All purpose flour-2 cups
Active dry yeast-1\2 tbsp
Luke warm water-1\2 cup
Salt-1 tsp
Sugar-2 tbsp
Vegetable oil-2 tbsp
Egg-1
Egg white-1
Basil seeds
Method of preparation


In a bowl ,add water and yeast and keep aside for 5 minutes
In another bowl, add flour, sugar and salt and mix
Add yeast water in the dry ingredients and knead to make a dough
Knead the dough for 5-6 minutes
Oil a bowl and keep the dough in it, covered with a cling film
Let it rest for at least 2 hours
The dough will double in size
Punch the dough and divide into 10 equal balls
Roll each ball to approx 10 inches and join the 2 ends
Insert the ends inside the loop to make a knot
Line a baking sheet with butter paper and keep these knots on the sheet
Keep covered for another hour
Mix 2 tbsp water in the egg white to make egg wash
Brush the knots with egg wash and sprinkle some basil seed
Bake in a pre heated oven for 15 mins at 360 degrees

The knots tastes best when they are out straight from the oven...But you can microwave them and eat later as well....Enjoy them with butter or marmalade and a hot cup of tea....

Tuna kabab

There was a time when I used to hate tuna..One of my cousin was in the US and she got us the cans...The fish was preserved in oil and we did not drain the oil before eating...That was the worst thing I have ever had..So tuna was a big no no for me...When we were in Malaysia 2 years back , one of Mohit's bua came to visit us....She made these kababs and I instantly fell in love with them...


They were "melt in the mouth " treats....So juicy and flavorful...The trick was to drain the oil and run the tuna under water, in a strainer off course... These kababs  have become a favorite in my house since then...Thanks Kamlesh bua for this amazing recipe....

All you need is ( serves 2-3 people )

Tuna-1 small can ( buy the tuna preserved in water. Drain the excess water before using the fish.If the fish is stored in oil, rinse it under running water and drain the excess water )
Onion-1\2(finely chopped)
Egg-1
Bread slice-1
Boiled Potato-1(grated)
Green Chili-2(finely chopped)
Fresh Coriander-3 tbsp(chopped)
Salt
Chaat Masala-1\2 tsp
Ginger-1 inch piece(grated)
Oil for frying



Method of preparation

Mix all the ingredients in a bowl
Make small balls
Shallow fry these balls from both the sides
Serve hot with coriander chutney

Roasted Garlic Focaccia


 Blog Hop Wednesday is a  exciting event started by Radhika of Tickling Palettes.  The concept behind this event is visiting our fellow bloggers and trying out new recipes every week.
This week I have been linked with http://samayalarai-cookingisdivine.blogspot.com....There were so many amazing recipes to choose from but this focaccia caught my eye...
Focaccia is a flat oven baked Italian bread which may be topped with herbs or other ingredients. The dough is the same as of pizza....I have been thinking for a while to make this beautiful bread.....and when I saw it in the blog ,I could not resist myself from making it...

I have tweaked the recipe a bit .....Instead of making herb oil , I have made roasted garlic oil as I didn't had  all those herbs at hand .....And I have used all purpose flour instead of bread flour...But the result was amazing ...The bread was so soft and had a nice crust...


Ingredients


For the roasted garlic olive oil

Roasted garlic cloves-4-5
Extra virgin olive oil- 1cup


For the bread

All purpose flour-3 cups
Salt-21\2 tsp
Sugar-1\2 tsp
Yeast-11\2 tsp
Luke warm water-11\2 cups
6-7 pods of roasted garlic
Extra virgin olive oil-1\4 cups and 1 tbsp
Cherry tomatoes-5-6(halved)
Onion-1\4 (sliced)
Mozzarella cheese- 3 tbsp


Method of preparation



Add the oil in a pan
Add chopped garlic cloves
Simmer for 10 mins
Strain
keep aside


In a bowl , add water , yeast and sugar and leave for 3-4 minutes
You will see the formation of foam on top
That means your yeast is active
In a bowl, add flour, salt, 4-5 cloves of chopped roasted garlic, 1\4 cup olive oil and knead with yeast water for 5-7 minutes and make a ball
Oil another bowl with 1 tbsp olive oil and keep the dough in it
Cover with a cling film and keep in a warm place for 1 hour
Your dough will double in size
Brush a pan with olive oil
Punch the dough and spread the dough in the pan
Keep covered for another hour
Preheat the oven at 350 F
Top the focaccia with cherry tomatoes, onion, mozzarella cheese and roasted garlic cloves
Bake for 30 -32 mins till a tooth pick comes out clean
Serve hot with the oil

Paneer Butter Masala

First time I made a butter masala was with chicken....This recipe is also one of those which has given me a difficult time...I have tried numerous recipes but none tasted perfect to me and to my hubby dear...But because I am not the one who gives up quickly,I've been trying and trying the recipes from where ever I got them and then after picking something from here and something from there I made my own recipe which both of us liked a lot.....


All you need is....

Paneer- 250 gm
Onion-2 medium (chopped)
Butter- 4 tbsp
Cream-50gm
Black cardamon-2-3
Cloves-3-4
Black pepper corn-3-4
Tomato puree- 3tbsp
Curd- 3tbsp
Kasuri Methi- 2tsp
Fresh coriander- 2 tsp
Red chili powder- 1 tsp
Kitchen king- 2 tsp
Salt




Method of preparation

Take 3 tbsp butter in a pan
Make a bouquet gurney with black cardamom, cloves and peppercorn
Add it in the butter
Add onion and fry till golden brown
Add curd and cook for 4-5 minutes , stirring continuously
Add tomato puree and again cook for 2-3 minutes
Remove the bouquet gurney and blend the onions and tomatoes in a blender to make a smooth paste
In the same pan, add 1 tbsp butter
Add the onion and tomato paste, salt, kitchen king and red chili powder
Cook for 2 minutes
Add paneer and two cups of water
Cook for 5-6 minutes
Add cream and kasuri methi and cook for 2 minutes
Garnish with fresh coriander and cream
Serve hot with any kind of bread

Kesari Kheer


Kheer is a very common north Indian dessert....My grandmother used to make kheer for all the festivals and for guests....It requires minimum ingredients and  is easy to cook..


.You put the pot on the stove and by the time you are finished with rest of your cooking , the kheer is done.......So after I got married , I decided to make Kheer on one fine day....After all it was so easy to make...But to my horror,it was not all that easy...I didn't know the measurements excatly and ended up with Kheer good for 15 -20 people....It was the monkey story  coming alive...I was putting more rice , then more milk and then more rice and more milk....Moral of the story...All that looks easy is not easy..:)
But  now after making it so many times , I have pondered the measurements and never go wrong....



 So all you need is

Full Cream Milk- 6 cups
Rice-1\4 cup
Saffron strands- a pinch
Sugar- 1\4 cup
Almonds and cashew nuts
Pistachios for garnishing


Method of preparation

Soak rice in water for 5-6 hours
In a heavy bottom pan , add milk
When the milk comes to a boil, add rice and saffron strands
Simmer the gas and cook for an hour stirring in between
When the rice is nicely cooked and mushy mushy, add sugar
Add almonds and cashews
Garnish with pistachios and saffron

Sparkling Strawberry Lemonade


I have just started blogging and I am kind of addicted to it already...I could not blog for one week for some reason and look how desperate I am to share my recipes....


We went to a strawberry farm sometime back and they had strawberry lemonade on their restaurants menu.....It was the first time I had lemonade with some kind of fruit in it...We are used to drinking plane ones...It was really a good change from the regular one...and it was very very refreshing ...First sip and I decided to make it again at home...But with your mind preoccupied with so many other things and a kid who is on vacations makes you forget a lot of them.... When I went to a near by grocery store and found strawberry on sale , I got two big boxes for us.....And then began all the mind jingling and recalling...And first thing that came to mind was this lemonade...It was a perfect relief from the heat ......


 All you need to make is

Lemon juice-1\2 cup
Water-1 cup
Sugar- 1\2 cup
Strawberries- 1 cup(chopped)
Mint leaves
Sparkling Water or soda-400 ml
Ice cubes



Method of preparation

In a pan add water and sugar
Heat till all the sugar is dissolved
Cool 
Blend strawberries with half of this syrup in a blender
In a jug add lemon juice, strawberry puree, remaining syrup , ice cubes and sparkling water
Garnish with mint leaves and lemon rings
