According to epicurious Quick Bread is a bread
that is quick to make because it doesn't require kneading or rising time. That's because the leavener in such a bread is usually baking powder or baking soda, which, when combined with moisture, starts the rising process immediately. In the case of double-acting baking powder, oven heat causes a second burst of rising power. Eggs can also be used to leaven quick breads. This genre includes most biscuits, muffins, popovers and a wide variety of sweet and savory loaf breads.
I decide to make muffins and tried to experiment with coffee ....I made a coffee and walnut cake sometime back and everyone loved it.....This time, apart from coffee, I decided to add chocolate to my muffins....

She supplied us with a base recipe and shared some recipes she loves from various websites and encouraged us to build upon them and create new flavor profiles.

ReplyDeleteI'm wondering if the glaze is meant to be that thin? A cup of milk to only 1/2 cup confectioners sugar? I'd love to make these for hubs to take to work tomorrow, but the glaze amounts just look a bit off to me. I can't remeber, my password which is why I post as Noneofyour... My name is Tracee and I can be reached at tracee@zbzoom.net Thanks so much!!

ReplyDeleteHi! Just wanted to say thank you for this recipe, I tried them & they were really yummy, as yummy as they looked on the pics :)
ReplyDeleteAlso, I made an alternative the last time I made them, instead of coffee I put freshly squeezed orange juice & some orange zest, and they were so yummy like that, too. I actually bought a cocoa muffin that had orange flavor, so I got inspired & I knew this recipe would be perfect with orange :)
Anyway, once again thank you so much, I know I'll make these again & again, both with coffee & with orange juice, I tried quite a lot muffin recipes & these are my fav!
