Apple and Pecan coffee cake with Browned Butter Glaze



I never thought that blogging would be anything more than just cooking or baking and taking pictures of my recipes...I started to blog just to keep a record of my recipes and to pass my time by picturing them...But realised pretty soon that it is much much more than that...It has become like a full day job that gives me real pleasure....It opened my doors to make friends with other bloggers and learn a lot of new things, which I would have otherwise missed....I joined LA food bloggers group last month and was lucky to meet a few food bloggers at the FBLA monthly meet...The theme of the month was Pears and Apples and each one of us had to make something with that theme...The table looked gorgeous with all the lovely dishes laid out...There were cakes and tarts and salads and rolls and the list goes on....From my side I took this delicious Apple and Pecan coffee cake...Cherry on top was the brown butter glaze that was so yum, I ate half of it before pouring it on the cake....So here is the recipe...



All you need is ( adapted from http://girlinthelittleredkitchen.com )

  • Unsalted butter-1 cup
  • Sugar-1 cup
  • Vanilla extract-1 tsp
  • Eggs-3 ( large )
  • All purpose flour-3 cups
  • Baking powder-3 tsp
  • Baking soda-3\4 tsp
  • Milk-1 and 1\4 cups
  • Apples- 50 gms ( peeled, cored and cut into 1\2 inch dice )
  • Pecans-3\4 cups ( toasted and chopped, you can use walnuts in place of pecans )
  • Sugar-1\2 cup
  • Cinnamon powder-1 tsp
  • Cocoa powder-3 tsp


For the glaze

  • Unsalted butter-1\2 cup
  • Confectioner's sugar-1 cup
  • Milk-1\4 cup




Method of preparation

Pre heat the oven to 375 degrees F
Grease and  flour a 11 cup bundt pan
In a bowl, sift together all purpose flour, baking soda and baking powder
In another bowl, mix pecans, cinnamon powder, cocoa powder and 1\2 cup sugar
Cream the flour and butter till light and fluffy ( I used my hand blender for 3-4 minutes )
Add eggs one at a time and whisk till combined
Whisk in the vanilla extract
Add 1\3 rd of the flour and mix till combined
Add 1\3 rd of the milk and whisk till combined
Repeat with the remaining flour and milk
Spoon 1\4 th of the batter in the pan
Spread half of the apples on top
Spread another 1\4th of the batter on top
Scatter the walnut mixture over the batter
Spread another 1\4th of the batter
Spread the remaining apples and cover with the remaining batter
Insert a long skewer in the cake and make swirls
Bake the cake for 60-65 minutes or till a long skewer come out clean
Cool in the pan for 5 minutes
Remove from the pan and cool on a cooling rack

For the glaze

Melt butter in a heavy bottom pan and  heat till it turns brown and gives out a nutty scent
Cool the butter
Strain it through a strainer
Add confectioner's sugar and milk and mix
If the glaze is too thick, add more milk and if it is too thin add some sugar
Pour over the cake once it had cooled

  12. I love the photo with the syrup dripping ever so delicately down. You're a pro. In fact, were you able to do that alone? Or, did you need a trusty assistant (aka your husband)?
