A very happy new year to all my readers….2012 has been a wonderful journey for us…A lot happened in the year and most of it happened for good…..The best of all was our stay in the US….I have traveled to a lot of other places in the world, but the stay here was the most pleasant one….Although it’s time to go back to India, I’ll treasure each and every moment of our stay here….A big heartfelt thanks to all the wonderful people who made this stay , the most cherished one….

I made this cake for the new year’s eve and it came out really good…Do give it a try…here is the recipe…

All you need is ( recipe from http://leitesculinaria.com )

For the cake

Unsalted butter-1 cup
Granulated sugar-1 cup
Honey -14 cup
Eggs-3
All purpose flour-2 cups
Baking powder – 12 tsp
Baking soda – 12 tsp
Whole milk-13 cups
Vanilla extract-1 tsp
Almond extract-12 tsp
Ground pistachios-23 cups

For the glaze

Confectioner’s sugar-12 cup
Unsalted butter-1 tbsp
Honey-2 tbsp
Fresh cream-1 tbsp
Crushed pistachios-14 cup

Method of preparation

For the cake

Grease and flour a 9 x 5 inch loaf pan
Pre heat the oven to 325 degrees F ( 163 degrees C )
Mix all purpose flour, baking powder and baking soda and keep aside.
Whisk sugar, butter and honey with your blender on high speed , till light and fluffy ( approx 4 minutes )
Add eggs, one at a time, beating well after each addition
Add half of the flour to the bowl and whisk till combined
Add the milk and whisk till combined
Add the remaining flour, vanilla extract, almond extract and ground pistachios and whisk just until combined
Pour the batter in the prepared pan and bake for 55-60 minutes, until a tooth pick comes out clean
If the cake has started to brown from the top very fast, cover it with aluminium foil
Remove the cake from the oven and cool in the pan for 5 minutes
Remove the cake from the pan and cool on a wire rack

For the glaze

In a pan, heat confectioner’s sugar, butter, honey and fresh cream till they are combined
While the mixture is hot, pour it over the cake
Garnish with crushed pistachios

  1. all i think of is ! isnt she gonig to miss those props when she gets back :) .. or is she gonig to carry them :D come soon.. we shall meet.. i too make a rose levy pista cake version.. pista cakes cannot really go wrong..
