German Apple and Pecan Cake

Life has become quite hectic for me. Dealing with two blogs, projects for 2 online portals, restaurant reviews and then the kiddo whose exams are approaching in just a few days. All this has taken all the time from my life. But I am not complaining. This is what I always wanted. I wanted to be busy doing something creative and learning something new each day of my life, and I am glad I chose to blog as it has given me the opportunity to unleash my creative side and I have learned so many new thing which I would have otherwise never thought about.

Most of my time go in exploring the net in search of some good recipes and during one of these sessions, I came across this German apple cake. The cake basically had a basic cake dough with apple slices arranged in two layers and then topped with a streusel. After looking at a few recipes, I came up with my changes and the cake turned out very soft and moist with pieces of apple and pecans giving a slight crunch. This cake can be kept for 2-3 days in an air tight container and is perfect as snack with your tea or coffee. We even had a warm slice with vanilla ice cream for our dessert. Here is the recipe.

All you need is

For the cake

Unsalted butter – 175 g ( room temperature )
Brown sugar – 1 cup
Eggs – 3 ( room temperature )
Vanilla extract – 1 tsp
All purpose flour – 1 and 1/2 cups
Baking powder – 1 tsp
Salt – 1/4 tsp
Milk – 3 tbsp
Tart apples – 2 ( I used granny smith, peeled and cut into thin wedges )

For the streusel topping

All purpose flour – 1 cup
Brown sugar – 1/2 cup
Cinnamon powder – 2 tsp
Unsalted butter – 75 g ( cold, cut into small cubes )
Pecans ( If pecans are not available, you can use walnuts instead ) – 1/2 cup ( lightly roasted and chopped )

Method of preparation

For the streusel topping

Mix all purpose flour, brown sugar and cinnamon in a bowl.
Add the butter pieces and mix with your finger tipes to make a crumbly mixture.
Add the roasted pecans.
Refrigerate till further use.

For the cake

Pre heat the oven to 180 degrees C.
Grease and line a 9 inch spring form pan.
Mix all purpose flour, baking powder and salt in a bowl and keep aside.
Whisk butter and sugar till light and fluffy. ( Approx 5 minutes on high speed )
Add eggs, one at time and beat well after each addition.
Add vanilla extract and mix well.
Add the flour mixture and whisk till combined.
Add milk and whisk till combined.
Pour half of the batter in the prepared pan and level it with a spatula.
Arrange half of the apple wedges on top of the batter.
Cover the apple wedges with the remaining batter.
Level with a spatula.
Arrange the remaining apple wedges on top.
Tightly press the streusel topping on top.
Bake for 40-45 minutes, till a tooth pick comes out clean.
Remove the cake from the oven.
Let it cool in the pan for 5 minutes.
Remove from the pan with the streusel side up.
Cut into slices and serve..
