Oats are perhaps the most eaten breakfast around the world. In my own home too, when I want to make a quick breakfast, oats is what I reach out for.
Since the mornings are maddening with lots of stuff happening at the same time and hardly any time to cook a decent breakfast, I have came up with this new way of preparing oats, soaking them in milk the previous day. Overnight Oats in Coconut Milk are an easy, quick way of having your fill of this wonderful fiber. Add to this some fruits like raspberry or strawberries and even dry fruits if required, and you have a breakfast that will last you through the better part of a day.
Oats are basically cereal grains, or flattened out seeds. They are made into oatmeal, and like other grains are a great source of dietary fiber and vitamins. The fiber is both soluble and insoluble, lowers blood pressure, fills the stomach, slows down the digestion process to make the nutrients absorbable, and generally reduces the need for munching on junk and other foods. Oats also decrease cholesterol and increase anti-oxidants in the blood. They also particularly help in diabetes. Here is how to make Overnight Oats in Coconut Milk.
Overnight Oats in Coconut Milk
- Instant oats - 1 cup
- Coconut milk - 1 cup
- Vanilla extract - ½ tsp
- Water - 1 cup
- Honey - 2 tbsp
- Strawberries - ¼ cup
- Pistachios - 2 tbsp
- Coconut shavings - 2 tbsp
- Add oats, coconut milk, vanilla extract and water in bowl and refrigerate overnight.
- Remove the bowl from refrigerator in the morning.
- Drizzle honey on top.
- Sprinkle strawberries, pistachios and coconut slices on top.
- Serve chilled.
