Having studied in Lucknow for Dental Science, there were days when I yearned for a piping hot, homemade meal which I could relish with my parents and siblings. Aloo aur Hare Pyaz Ki Bhujia being my favourite sabzi, made me really nostalgic every time any of my local friends brought homemade lunch to the college. Just while reliving those memories, I planned Aloo aur Hare Pyaz Ki Bhujia for yesterday’s lunch. As it is a simple dish, all the ingredients that were needed to make it, were available at home.

How to make Aloo aur Hare Pyaz Ki Bhujia Step by Step
Heat oil in a pan. Once the oil is hot, add garlic and green chilli and fry until garlic turns brown.
Add potato and spring onion greens.
Add salt to taste.
Cover the pan and cook the bhujia until potatoes are done.

Aloo aur Hare Pyaz ki Bhujia is a quintessential Indian sabzi that you must savour at least once in life with piping hot Phulkas.
- 1 cup Potato Peeled and cut into small pieces
- 3 cups Spring onion greens Chopped
- 3 tbsp Vegetable oil
- 8-10 cloves Garlic Crushed
- 2-3 Green chilli Slit into half
- Salt to taste
- Heat oil in a pan.
- Once the oils hot, add garlic and fry until slightly browned.
- Add green chilli and fry for a few seconds.
- Add potato and spring onion greens.
Now add salt and cover the pan.
- Cook on low heat until potatoes are done.
- Serve hot with Dal and Phulke.
