In order to prepare this Frittata, all you need to do is saute some onion and leek and pour in the eggs whisked with salt, pepper and goat cheese.
Asparagus goes on top and in all of five minutes, the Frittata is ready to be popped in the oven. Pop in some bread slices as well during half way of baking to go along with the frittata. Asparagus Goat Cheese Frittata
Asparagus Goat Cheese Frittata is a healthy and delicious option for breakfast. Easy and quick to make, it will definitely make an impression.
- 3 tbsp Olive Oil
- 1/4 cup Onion Thinly Sliced
- 1/4 cup Leek thinly Sliced
- 1 tsp Garlic Chopped
- 12 Eggs
- Salt to taste
- 1/2 tsp Freshly Cracked Black pepper
- 50 g Goat Cheese
- 6-8 Asparagus
Pre heat the oven to 180 degree C.
Heat olive oil in an 8 inch Oven Proof, Non Stick Pan.
Add onion, leek and garlic and fry till onions turns pinkish.
Meanwhile whisk eggs in a bowl.
Add salt and pepper in the eggs and whisk well.
Crumble the Goat Cheese and add it in the eggs.
Pour the eggs over the onions.
Arrange the asparagus on top .
Cook on medium heat for a minute.
Transfer the pan in the pre heated oven and bake the frittata for about 10 minutes or until a skewer comes out clean.
Serve hot with bread on the side.
