Memorial day weekend is just about here and so are the summers. This calls in for some parties and outings. Its a constant challenge to find something easy and quick to make and pair it your favourite wines. Cavit has come up with this great idea of celebrating the Friday before Memorial Day as National Pinot Grigio Day. This year its going to be the first Pinot Grigio day on Friday the 26th May. Since its summers, I thought of pairing some cheese preparation with Cavit Pinot Grigio wine which has light, refreshing flavors of citrus and green apple and is apt for the season. This Baked Brie with Blackberries and Thyme is a simple yet flavorful recipe that you cannot go wrong with. Simple and easy to quick, it pairs so well with the Pinot Grigio and is ideal to celebrate the day and Memorial Day weekend. So get on with your friends and family and make the most out of the day with this Baked Brie with Blackberries and Thyme and serve it along with some crackers and wine.

Baked Brie with Blackberries and Thyme
- Brie Cheese - 1 Wheel
- Blackberries - 100 gms
- Thyme - Few sprigs
- Crackers - for the side
- Pre heat the oven to 180C
- Take out the Cheese from its packing and remove the Cheese cover using a sharp knife
- Using a sharp knife score the top rind of the cheese in a criss cross pattern
- Place the cheese back in its wooden container
- Bake for 20-25 minutes until cheese is soft and runny
- Top with Blackberries and let it rest for 5 minutes
- Serve with wine and crackers
