    Soft, fluffy, and super easy to make Cake Mix Cookies are the perfect dessert to make when you don’t feel like spending too much time in the kitchen yet want something great to munch on.

    Prepared with just 3 ingredients, one bowl, and 15 minutes, these cake box cookies taste out of the world. They are so easy to make that any new baker or even kids can easily pull them through.

    The best part is that you can make endless combinations using different flavors of cake mix and add ons.

    Serve the cookies made with cake mix along with your evening cup of tea or coffee. You can also munch on them, in between the meals, post meals as dessert or whenever the hunger strikes. You can also pack it in your kids snack box.

    Ingredients

    Cake Mix Cookies Ingredients

    Cake Mix – I mostly use a yellow cake mix to make these cookies but you can literally make them with any boxed cake mix that you fancy. Some of the ones that I have tried are butter pecan, spice cake, carrot cake, chocolate mint, strawberry, red velvet, lemon, confetti, and cherry chip.

    Oil – Use any light-colored neutral oil. I have used vegetable oil but canola and corn oil also work great.

    Eggs – Eggs give these cookies the structure so do not skip adding them. These cookies cannot be made eggless.

    Add On’s – Apart from the 3 basic ingredients, you can add a few others to make these cookies even more interesting. I have added sprinkles or funfetti but here are some of the other options that you can try.

    • Chopped Candy Canes
    • Mini Marshmallow
    • Chopped Nuts like walnuts, peacn, macadaemia nuts.
    • Citrus zest
    • White or Dark Chocolate Chips
    • M&M’s
    • Peanut Butter Chips
    • Butter Scotch Chips

    How to make Cake Mix Cookies?

    Preheat the oven to 350 Degrees F (180 Degrees C). Line a baking sheet with parchment paper or a baking mat. Add cake mix, oil, and egg to a large bowl and mix everything well together.

    Add the sprinkle to the bowl and mix well.

    Drop 1 tablespoon of batter on the baking sheet keeping a distance of 2 inches between each round. I used my small ice cream scoop to measure the batter and drop it on the baking sheet.

    2 tablespoon batter dropped on the baking sheet lined with kitchen tissue.

    Bake for 8-10 minutes. Remove the tray from the oven and let teh cookies rest for 5 minutes. Transfer the cookies to a cooling rack and cool completely. Store in an airtight container for up to a week.

    Combination Ideas

    The combination possibilities while make these cookies are endless. I am listing some of my favorite combinations that you can try as well.

    1. Red Velvet – Red Velvet Cake Mix + White Chocolate Chips
    2. Grinch Cookies – White Cake Mix + Green Food Color + Red Heart Sprinkle
    3. Funfetti Cookies – Funfetti Cake Mix or Yellow Cake Mix + Funfetti
    4. Almond Joy – Whte Cake Mix + Crushed Almonds + Sweetened Coconut Flakes + Chocolate Chips
    5. S’mores – White Cake Mix + Chocolate Chips + Mini Marshmallows + Crushed Graham Crackers
    6. Yellow Cake Mix + M&Ms

    Refrigerate the dough for 30 minutes if it’s too sticky.

    Do not over bake the cookies. Bake for 8-10 minutes until they are set and then remove from the oven.

    You can dip the cookies in melted chocolate to make them even more luscious.

    Storage Suggestions

    These cookies can be baked freshly, as they hardly take 15 to 20 minutes. But if you want to store it, they will last for 2 to 3 weeks at room temperature in an air tight container.

    Freezing these cookies is always a good idea, if you have leftover cookies which you are not serving any time soon. Prepare the cookie dough according to the instructions given below and once it is ready chill it in the refrigerator for about an hour.

    After an hour, make small balls from the cookie dough and place them on the cookie sheet. Place cookie sheet in freezer for at least 1 hour, or until cookie dough balls have frozen.

    Once they are frozen, add these cookie balls in a ziplock freezer bag or an air tight container for upto 3 months. Whenever you want to bake them again, place frozen cookie dough balls on cookie sheet and let them come to room temperature. 

    Next, bake them. You might have to bake them for extra minutes, as they were frozen.
