What is Schnitzel?
Schnitzel is a German word for cutlet, which is also used to describe meat that has been breaded and fried.
It is a German recipe where traditionally veal chops are pounded and then coated with eggs and bread crumbs. It is later deep fried until crunchy and golden brown in colour. This dish gets its extra crispiness from the bread crumbs or panko and the juicy meat inside makes it even more delicious.
However, I love using skinless boneless chicken breasts to make this dish, I have also seen people making it with pork tenderloin. Pounding the chicken and bringing it in saltwater are two important aspects of this dish.
Also, add some lemon juice over the Chicken Schnitzel, it really does make all the difference in the world. You can also add in some melted cheese or mushroom sauce on top.

Yes, you can definitely cook Chicken Schnitzel in olive oil, but only when you are pan frying or baking it.
What to serve with Chicken Schnitzel?
You can serve Chicken Schnitzel with some Potato sides such as French Fried, Mashed Potatoes, Potato Salad, Baked Potatoes or even Roasted Potatoes. I also like to serve it with Coleslaw or with a nice crisp salad.
What all meat can be used to make Schnitzel?
You can use Boneless Veal Chops, Boneless Pork Chops and Boneless Skinless Chicken Breast to make Schnitzel.
How to make Baked Chicken Schnitzel?
To make the Baked Chicken Schnitzel, preheat the oven to 220 degrees C. Line a large baking sheet with aluminium foil and drizzle olive oil all over the foil. Once you are done, place the lined baking sheet in the preheated oven.
Now, take out the chicken from the brine solution and pound the chicken using a meat tenderiser until they are ¼-inch thick. Season the chicken with salt and pepper.
Coat the chicken with flour and shake off any extra flour on it. Now dip the breast in egg and then finally coat with bread crumbs. Keep it aside.
Next, remove the baking sheet from the oven and arrange chicken in 1 layer on the sheet. Drizzle olive oil over each piece of coated chicken.
Place the baking sheet back in the oven and bake in the preheated oven for about 5 to 6 minutes. Flip the chicken and continue baking until the upper layer is crispy and brown in colour.
- 4 Chicken breast
- ½ cup Salt
- 2 Eggs
- 1 cup Bread crumbs
- Oil for frying
- Mix salt in 1 litres of water and add the chicken breast in this brine.
- Let it brine for 30 minutes.
- Whisk eggs in a bowl.
- Take out the bread crumbs in a shallow plate.
- Take out the chicken breast from the brine solution and pound it using a meat tenderiser.
- Dip the breast in egg and then coat with bread crumbs.
- Heat oil in a pan.
- When the oil is hot, deep fry the chicken breast on medium heat until golden brown from both the sides.
- Drain on kitchen towel.
- Serve hot along with french fries and salad.
