    About This Recipe

    Cilantro Lime Grilled Chicken is an easy and yummy weeknight dinner recipe where a delicious sauce is oozing out of the Grilled Chicken. Chicken is marinated with a set of full of flavor ingredients which makes it lip-smacking.

    It is then grilled to perfection until the upper layers have a nice brown color and chicken is cooked properly. 

    You need to marinate the chicken in the cilantro mix for a good number of hours. Resultantly, once it’s ready, it would taste juicy, subtly spicy, and tender. Thanks to fresh lime, red pepper flakes.

    But if you are pressed with time, just mix the marinade and coat the chicken in it and keep aside for 15 minutes. Grill it until done. There will be only a slight difference in taste.

    Hence, do not be surprised if you start drooling way before it gets ready. Overall, its flavors explode in your mouth. It has a balanced taste of all the ingredients. And, it kind of tugs your taste buds.

    Ingredients

    Chicken – High in protein, Chicken is a great ingredient to include in your diet. I have used boneless chicken breast but you can use thighs too. You can also use Fish or Prawns and prepare this dish.

    Cilantro Lime Marination – The tangy and sweet marination is made with lime juice, lime zest, garlic, extra virgin olive oil, honey, red chili flakes, cumin powder, soy sauce, salt, black pepper powder, and cilantro.

    To make the best of this chicken recipe, make sure to use fresh cilantro and good quality of olive oil.

    Step by Step Recipe

    Pound the chicken breast to even thickness. If they are too large, you can cut them in half.

    Mix all the remaining ingredients in a bowl.

    Add chicken breast and coat them well with the marinade. Keep aside for 30 minutes.

    Preheat an oven to 400 Degrees F (200 Degrees C). Keep the chicken on a baking tray. Pour the remaining marinade on top.

    Bake for 22-25 minutes until chicken is cooked through. Remove the tray from the oven and let the chicken rest for 5-6 minutes. Cut the grilled chicken into slices. Serve with salsa and steamed rice.

    Frequently Asked Questions

    How to make this recipe in Slow Cooker?

    To make this chicken in a slow cooker, place the chicken breast in the slow cooker and pour the marinade over it. Cook on low for 6-7 hours.

    Can I use Bone in chicken to make it?

    Yes, you can use bone-in chicken to make this recipe. However, the baking time will be more as compared to when using boneless chicken breasts or thighs so keep that in mind.

    Can I cook it on a grill?

    Yes, just marinate the chicken as you do here and grill until the chicken is cooked properly and browned from both sides. The open grill will give more flavor to this recipe. You can even saute the marinated chicken in a pan.

    What can be done with leftover?

    You can use leftover Cilantro Lime Grilled Chicken in Sandwiches, Wraps, and Tacos.

    Sometimes, I even add it to my salads along with veggies and top it with a delicious dressing.

    Serving Suggestions

    Top your salad with this grilled chicken.

    Use this in tacos.

    Serve with steamed rice and salsa like I did. You can make avocado Salsa, Balsamic Strawberry Salsa, Mango Salsa, or Roasted Tomato Salsa to go with it.

    It goes great with cauliflower rice too.

    Serve Parmesan Roasted Broccoli on the side for a healthy meal.

    Storage Suggestions

    You can store the marinated Chicken in the fridge for about 2 days in a sealed container.

    If you want to meal prep, just cut the cooked chicken into small cubes and then keep in separate containers along with other components.

    You can also add Chicken and the marination in a ziplock freezer bag and freeze it for about 2 to 3 months. Just thaw it overnight and grill when you want to serve it.

    Ingredients 

    • 500 g Boneless Chicken Breast
    • 4 tablespoon Lime Juice
    • 1 teaspoon Lime Zest
    • 1 teaspoon Garlic (Minced)
    • 2 tablespoon Extra Virgin Olive Oil
    • 2 teaspoon Honey
    • 1 teaspoon Chilli Flakes
    • ½ teaspoon Cumin Powder
    • 1 teaspoon Salt
    • ½ teaspoon Black Pepper Powder
    • 2 tablespoon Cilantro (Minced)
    • 1 tablespoon Soy Sauce

    Notes

    You can use boneless chicken thighs to make this recipe too. It will be even juicier.
    You can skip adding soy sauce in this recipe for a change in taste.
    If you are not a cilantro fan, use parsley instead.

      I made it twice. Once i marinated only for half an hour but the second time i marinated for 24 hrs n that tturned out more yummy!

          also .. of using bone in chicken… what will be the qty… and what will be the baking time

            If using bone-in chicken, use 750, and the baking time will be 30-35 minutes.
