Funfetti pancakes are nothing but your old-fashioned pancakes loaded with colorful funfetti or confetti (sprinkles). These super-soft, light and fluffy pancakes can be made from scratch in just 15 minutes using simple ingredients.
Funfetti pancakes are perfect to serve for breakfast or as desserts. These are also great for birthday parties, holiday breakfasts, or any special occasion. You can choose the color of sprinkles according to the occasion.
You can also stack these pancakes on top of each other and make a birthday breakfast cake. Loaded with colorful sprinkles, these pancakes make for a great birthday breakfast idea, right?
The best part is they are super easy and quick to make, they are even more perfect for your lazy Sunday mornings. I sometimes even make them in different shapes using pan molds, to make breakfast even more interesting.

I am very fond of eating pancakes for my weekend breakfast, and thus I keep trying my hands on variations. Here are some of them

Ingredients

Flour – The base of these pancakes is prepared with all-purpose flour. You can always go for whole wheat flour, but the taste and texture will differ a bit. To be on the safer side, do half and half.
Sugar – You can adjust sugar per your taste. You can also add honey as a substitute if you want to add in a healthy alternative.
Eggs and Melted Butter – These two ingredients right here will make the funfetti pancakes soft and fluffy from inside.
You can also opt for unsweetened apple sauce instead of eggs and vegetable oil, or olive oil, instead of melted butter, in case you want to make your pancakes vegan.
Vanilla Extract – This is my absolute favorite ingredient, which adds a beautiful vanilla flavor and aroma instantly. Go for a good quality vanilla extract for the best results.
Sprinkles – Finally, fold in some sprinkles or funfetti. There are many sprinkles available in the market, just make sure you chose the good quality one.
Other – You will also need baking soda, baking powder, milk, and salt. Baking soda and baking powder combined helps the pancakes to rise and make them more fluffy, whereas milk helps in the softness of the same.
How to make Funfetti Pancakes?
Add 2 cups of all-purpose flour, 2 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt, in a large mixing bowl and mix well using a wire whisk.

Add ¼ cup sugar to the bowl and mix well.

Now add 1 and ½ cup milk, 2 eggs, ¼ cup melted butter, and 1 teaspoon vanilla extract to the bowl and mix just until combined. Do not overmix otherwise the pancakes will turn out hard. Some lumps in the mixture are fine.
Note – To make these vegetarian and vegan, replace eggs with apple sauce and butter with oil.

Add ¼ cup rainbow sprinkles to the bowl and fold gently until just combined.
Note – You can choose sprinkles according to the occasion. For Valentine’s day, use only pink or red, for Halloween, use orange and black, and for Christmas, use a mix of white, red, and green.

Let the batter rest on the counter for 10 minutes.

Heat a non-stick griddle over medium-high heat and brush it with oil or butter. Pour 2 ladle full of batter on the hot griddle. Cover the pan with a lid.
Note – I sometimes like to make these in a 5-inch pan. That way, my pancakes are all same in size and I can easily stack them.

Cook the pancakes on medium-low heat until bubbles start to form on the top surface and the pancakes start to brown from the sides.

Remove the lid and flip them using a silicone spatula and cook until the other side is also golden brown. Make other pancakes in the same manner. Serve hot with your choice of topping.

Frequently Asked Questions
So many people complain that pancakes don’t turn out great and most of us have only one question when to flip it? Well, pour the batter on the pan that is kept on a medium flame. Once done, you will flip the pancakes when you notice the following two things:
– If you notice the edges turning brown on the underside of the pancake, then it’s an indication that the pancake needs to be flipped.
– When bubbles start to form on the top of the pancake, then it means it is ready to be flipped.
You can top your funfetti pancakes with this super creamy vanilla glaze. To make the vanilla glaze, you will need just 5 ingredients – confectioner’s sugar, milk, salt, vanilla extract and butter.
All you have to do is melt the butter. Once it is done, add in other ingredients and then mix until it turns creamy. That’s it! Now drizzle it over the funfetti pancakes and serve.
Just like a vanilla glaze, you can even make buttercream glaze or frosting. For this one, you will need unsalted butter, vanilla extract, confectioner’s sugar, milk and food colouring (optional).
Whisk the butter using a hand mixer, stand mixer or a spoon until smooth and fluffy. Now add in sugar, vanilla extract and mix it properly. Next, pour in milk, food colouring (if adding) and whisk it for more 3 to 4 minutes until smooth.

Do not over mix the batter. If there are a few lumps, let it be. If over mixed, the pancakes will turn out hard.
Once the batter is ready, let it rest for 10 to 15 minutes, so that the gluten relaxes in the batter.
Before adding the batter to the pan, lightly brush it with oil or butter so that it doesn’t stick to the bottom and also for brown and crispy edges.
Use a heavy bottom pan to cook the pancakes. It will give them an even browning and cooking.
The temperature of the pan when you pour the batter into it is also very important. Heat the pan on medium-low heat and maintain the heat while cooking.
Topping Ideas
You can top your funfetti pancakes with whipped cream, vanilla glaze, or buttercream frosting. I have mentioned the process to make both, vanilla glaze and buttercream glaze above.
You can also top it with simple maple syrup or honey and throw in some of your favorite chopped fruits. Seasonal fruits taste the best.
Or if you like to make it chocolaty, drizzle some Nutella or chocolate syrup on top. Even strawberry sauce tastes great when topped on the same.
You can also add in some slivered nuts, granola, or seeds to add some crunch and a healthy twist.
And do not forget to sprinkle some more confetti on top.
Storage Suggestions
These funfetti pancakes taste great when made fresh, so I won’t suggest you store them. You can store the pancake batter instead for 2 to 3 days in an air-tight container in the fridge.
You can instead freeze the pancakes in a ziplock freezer bag. Let the pancakes cool down, put a wax paper in between each pancake, and then freeze.
If you want to keep these pancakes warm for a few hours, line them on a baking tray in a single layer. Pop the tray into an oven set at 160 degrees F until ready to serve.
