Garlicky Potato and Spring Onion Soup is a beautifully flavored, thick, creamy soup, a nice warming treat during cold mornings. Fried garlic in butter has a beautiful fragrance, and I have often used this while cooking other stir fried dishes.
The flavor enhances the taste of this soup and spring onions add their own essence to this soup.
Soups are very nourishing, and are often considered as a start to any meal. They are however, very nutritious and can be enjoyed as a one-pot meal any time of the day.
Adding boiled potatoes lends a starchy texture to this soup dish and makes it quite filling as well. Just pair it with some homemade bread and you have a sumptuous meal ready in no time.

Garlicky Potato Spring Onion Soup is a beautifully flavored, thick, creamy soup, a nice warming treat during cold morning
- 1 tsp Butter
- 1 tsp Olive oil
- 1 tsp Garlic Crushed
- 1/2 cup Spring onions Both green and white parts, Chopped
- 1/2 cup Potato Boiled and grated
- Salt To taste
- 1/2 tsp Black pepper Freshly ground
Heat butter and olive oil in a pan.
Once the oil is hot, add garlic and fry for a few seconds.
Add spring onions and boiled potatoes and saute for 2-3 minutes.
Add vegetable stock and bring the mixture to a boil.
Cook the soup on low heat for 4-5 minutes.
Blend the soup in a blender and return to the pan.
Add salt and pepper and cook for a minute.
