    Gingerbread Granola is a Christmasy take on the regular granola with addition of Ginger Bread spices and Christmas colours from Pistachio and Cranberries. Here is how to make it.

    About This Recipe

    These days Granola is almost a regular in my breakfast. I love to top my smoothies, porridge and milkshakes with it, and thus I am experimenting with a lots of flavours these days. The latest one I tried my hands on is this Gingerbread Granola, which is loaded with wonderful natural nuts and spices and has a Christmas vibe to it.

    This one is crisp, subtly sweet, spiced and extremely nutritious granola. Since it is loaded with nuts and spices, it is nourishing, provides good fibre content and maintain satiety for a longer while.

    Just eat it as snack or top your morning breakfast smoothies just like I do, and this will become your favourite too.

    It also makes for a lovely DIY Christmas Food Gift. Make a big batch and then pack some in a small glass jar. Tie up the jar with pretty ribbons and you have a beautiful Xmas gift ready.

    You must be thinking this one is difficult to make at home, but no, this Ginger bread Granola is easier than you think. Just mix the dry ingredients with wet ingredients, bake and it is ready.

    So get everything ready and make his super healthy and nutritious Cranberry Gingerbread Granola at home from scratch. Try this and you will never buy the store bought Granola. Also making it at home is more economical than buying it from a store.

    This Gingerbread Spice Granola is,

    Ingredients

    Rolled Oats – You will easily get rolled oats at your nearby grocery store. These are available under various brands, you can get any of them.

    Dry Fruits – We will add in Almonds, Pistachios and Dried Cranberries. If you want you can experiment and add in more nuts or even seeds too such as Pumpkin seeds, Sunflower seeds etc.

    Spices – Add in some spice for an added flavour and a christmasy vibe such as Ground Ginger, Ground Cinnamon, Ground Nutmeg and Ground Cloves.

    Honey – Honey adds a sweet flavour with a nice texture. You can also use in maple syrup instead of honey if you are looking for a vegan version.

    Oil – Coconut Oil is nutritious and best choice to make granola.

    Dark Brown Sugar – For some added sweetness, ass in some brown sugar which also adds a caramelised texture in the granola. You can skip it too.

    You can always control the ingredients in this Granola as per your taste and preference.

    How to make Gingerbread Granola?

    Pre-heat the oven to 180 degrees C. Mix the dry ingredients in a bowl.

    Mix wet ingredients in another bowl.

    Pour the wet ingredients over the dry ingredients and mix well.

    Transfer the mixture in a baking tray and spread evenly.

    Bake for 20-25 minutes until granola is slightly browned. Remove from oven and let cool. Store in an airtight container for up to a few weeks.

    Variations

    This gingerbread flavored granola can be put together in minutes, and can be varied according to preferences for particular dry fruits. You can have it with either chilled milk or yogurt.

    A few things to remember when preparing this granola,

    • Do not press the mixture too hard in the baking tray. Just spread it loosely.
    • The wet ingredients help in keeping the dry ones together and making them crispy.
    • Granola has to be stored in airtight, sealed containers to make it last longer.

    Usage Suggestions

    This Gingerbread Granola can be used to top on Smoothies, Ice Creams, Flavoured Yogurt, Milk, Porridge, Milkshakes, or just to munch on like a snack.

    Storage Suggestions

    Once you bake the Gingerbread Granola, cool it down well before storing in a clean glass jar. This will last for good 3-4 months.

    This Gingerbread granola freezes well too. Once it cools down, just transfer in a freezer-safe container or zip lock bag and store for up to 6 months.

    Ingredients 

    • 4 cups Rolled oats
