    Holi is just around the corner and what if we could make a nice cake variation for it. This colorful Holi Cake makes the celebration extra special. This is a simple variation to the sponge cake and your guests would just love the presentation. So go ahead and bake it today.

    About the recipe

    This Holi Cake is made by dividing batters into smaller portions and adding different edible colors to them. And voila, my Holi Cake came out freshly baked and ripe like a rainbow on the plate. I cannot express how my kid ran to me on seeing it and got tempted to relish it right from the first sight!

    A colorful cake that can be baked for Holi or any other occasion

    Equipment

    • Oven

    Ingredients 

    For Sponge Cake

    • 1 cup All purpose flour
    • 1 teaspoon Baking powder
    • ½ teaspoon Baking soda
    • 1 cup Sugar
    • 3 Eggs
    • ½ cup Butter
    • 1 teaspoon Vanilla extract
    • Food colors (yellow, green, magenta, and blue)

    For Soaking Syrup

    • ½ cup Water
    • ½ cup Sugar
    • 1 teaspoon Vanilla extract

    For Frosting

    • 3 cups Whipping cream
    • 1 cup Confectioner's sugar
    • 1 teaspoon Vanilla extract
    Prevent your screen from going dark

    Instructions

    For the Sponge Cake

    • Pre-heat the oven to 180 degree C
    • Grease and line an 8″ pan
    • Mix all-purpose flour, baking powder and baking soda and keep aside.
    • Beat egg and sugar until light and fluffy (approx 2-3 minutes)
    • Add butter and whisk well
    • Add flour and vanilla extract and mix well
    • Divide the batter in 4 parts in separate bowls
    • Add one food color to each bowl and mix well
    • Pour the batter from one bowl in the centre of the pan
    • Pour batter from another bowl on top of the first batter
    • Keep pouring the batter on top of the previous batter until you are out of batter
    • Tap the pan on the slab once
    • Bake for 30-35 minutes
    • Cool the cake in the pan for 5 minutes
    • Take out from the pan and cool on a cooling rack

    For Soaking Syrup

    • Mix all the ingredients and keep aside

    For Frosting

    • Add all the ingredients in a bowl and whip till cream forms stiff peaks
    • Keep 1 cup aside and divide the rest into 4 parts
    • Mix different colors to each of the parts and keep aside

    For the Assembly

    • When the cake is cooled, cut it horizontly into half slice from the middle
    • Brush one half with half of the soaking syrup and spread 1 cup of plain whipped cream on top of it
    • Cover with the other half
    • Brush with the remaining soaking syrup
    • Cover with a layer of frosting (this is called crumb coat )
    • Decorate the cake with the remaining colored cream
    • Serve fresh

    Notes

    It is important to keep the consistency of the batter same for all colors for the best results.
