Many of us absolutely love cheese, in all varieties and forms and have adopted this Italian staple into our food, whether in breakfast, snacks or meals. Although we are acquainted with cheddar, Mozzarella etc, feta is another creamier cheese that is also versatile and can be used in a variety of ways, one of them being Marinated Feta.
Feta cheese is available readymade, but in this version, it is mixed with a variety of herbs and olive oil to give it a silky, soft goodness. Marinated Feta Cheese which is made by marinating Feta cheese with olive oil and herbs has a beautifully texture and goes well with crackers and salads.
- 1 cup Extra Virgin Olive Oil
- 300 g Feta cheese Cut into cubes
- 2-3 sprigs Fresh rosemary
- 2 tbsp Fresh dill
- 5-6 sprigs Fresh thyme
- 1/2 tsp Red chilli flakes
- 1/2 tsp Crushed black pepper
Take a clean sterilised jar and fill it with feta cubes.
Mix olive oil, rosemary, dill, thyme, red chilli flakes and black pepper in a bowl.
Keep adding this mixture as you layer the feta in the jar.
Top up the jar with more olive oil until the cheese is submerged in oil.
Refrigerate the jar and use within 2 weeks.
