    Oven Roasted Golden Melting Potatoes are Melt in Your Mouth Southern-style Spuds. These are crispy and caramelized from the outside and soft and delicate from the inside. This potato side dish is scrumptious and can be made for special occasions or holidays.

    About This Recipe

    Melting Potatoes, the most buttery creamy potato appetizer or side dish you will ever eat. Full of butter and Italian seasonings, this rich potato appetizer is a must if you want to try something unique and different.

    As potatoes are everyone’s favorite, these Melting Potatoes are always a hit. It is so easy to make, that you can’t go wrong with it and they are so yummy that the pickiest of eater will enjoy it. These are crispy and brown from the outside and very tender from inside, literally the best of both worlds – Roasted Potatoes and Mashed Potatoes.

    As goes by its name, these creamy and caramelized potatoes will just melt in your mouth and I guess this is where it even got its name from.

    Ingredients

    Melting Potatoes Ingredients.

    Potatoes – Yukon Gold Potatoes and Russel Potatoes are the best to make melting potatoes, but if you don’t get these, you can always make it with basic Indian potatoes.
    Just make sure they are not too small, as we need at least 1-inch thick slices of potatoes. Potatoes are washed, peeled, and sliced thickly.

    Butter – You can use any salted butter available in the market. Melt it in the microwave or pan before using it.

    Seasonings – To flavor this up, add seasonings such as salt, pepper, red chili flakes, and oregano.

    Garlic – Garlic is my absolute favorite ingredient. I have used less in this recipe, but if you love that garlicky flavor, feel free to add in more.

    Chicken Stock – Finally, this recipe uses Chicken Stock, which adds up more flavor. You can use veg broth instead, to make it vegetarian, but the taste will differ a bit.

    How to make Melting Potatoes?

    Preheat the oven to 420 Degrees F. Place the oven rack in the upper-middle position of the oven. Peel the potatoes and cut them into 1 inch thick round slices. Keep them soaked in water until ready to use to avoid their blackening due to oxidation.

    Once ready to bake, discard the water. Wipe the potatoes well with a kitchen towel to remove all the excess water. Mix them with melted butter, salt, pepper, chili flakes, and oregano in a bowl.

    Arrange the potatoes on a baking tray in a single layer and bake for 20-25 minutes. I used a 9″x13″ metal baking tray. Avoid using glass tray as it might shatter due to high baking temperature.

    Using a spatula, flip the potatoes rounds and bake for another 10 minutes.

    Baked for another 10 minutes.

    Flip the potatoes once again and pour chicken broth over them. You can use vegetable broth to make this recipe vegetarian. Sprinkle chopped garlic all over the tray.

    Bake for another 15 minutes. Remove the tray from the oven and serve the melting potatoes hot. Drizzle the leftover liquid over them while serving.

    Pro Tips By Neha

    I have used only 1 teaspoon of garlic to make this dish, but if you like garlicky flavor in your potatoes, then you can add more as per your taste and preference. 

    If you are a vegetarian, you can substitute the chicken stock with the vegetable stock. The taste might differ a little, but I am sure it will taste equally good.

    When you are making this recipe, just avoid the glass baking trays as they can burst because of the high temperature. You can use the metal one instead.

    Make sure you cut the potato slices in the same thickness, to ensure even cooking. Keep the sliced potatoes soaked in water until ready to use. Wipe them very well with a kitchen towel before mixing them with butter.

    I feel Yukon Gold Potatoes gives the best results when making this recipe. However, feel free to use any potatoes that are easily available to you.

    You can experiment with the seasonings as per your choice. Feel free to use fresh herbs such as Thyme, Rosemary, etc.

    Serve them warm, as they taste great only that way.

    Serving Suggestions

    These Melting Potatoes are hard to resist and if it was on me, I would serve them with almost everything.

    You can serve it on its own as an appetite with a creamy dip of your choice.

    It tastes really good as a side with a steak and a fresh salad like Mediterranean Quinoa Salad or Broccoli Apple Salad.

    Serve these with chicken, pork, beef or any sea food such as fish, prawns etc.

    You can also serve it as a side with your Burgers, Wraps and Rolls.

    You can also add it in your Buddha bowls and make it a little interesting.

    Storage Suggestions

    These potatoes will last in the fridge for about 4 to 5 days when stored in an airtight container. Before serving, reheat in the microwave for a minute or two or until nice and warm.

      Hi Neha.
      I want to make this for a bbq party. Can i already predo the baking and do the chicken broth part a couple of hours later when everyone os ready to eat?

        You can make the recipe as mentioned Sangeeta. Just keep the pan in the oven at low temperature for 30 minutes and they will be good to serve.
