    Well if you are someone like me who loves to use Chicken for your everyday meals, then you have to try my Salsa Chicken Recipe. This one is delicious, healthy, needs minimal efforts, gets ready fast and I assure you, you will love this Salsa Chicken so much that it will be a regular at home.

    What do I love about this recipe? This Chicken dish is easy and quick, yes! But it is also prepared with just 5 ingredients. Yes, you read that right!

    Tender, juicy, and perfectly cooked, this low carb chicken is baked on a bed of fresh tomato salsa and then topped with melted cheese and parsley to finish this fantastic recipe. My mouth is literally watering writing about it!

    Chicken is partially cooked with the Taco seasoning and then baked with tomato salsa for about 35 minutes, giving it that perfect Mexican taste. I love how the tangy and fresh taste of tomato salsa complements the taco flavored chicken.

    So, in case you are looking for a low carb, keto-friendly recipe that is absolutely lip-smacking, your search ends here. Make it for your weeknight dinner, when you are short on time but still want something that satiates your palates.

    Ingredients

    Salsa Chicken Ingredients.

    Chicken – A great source of protein, Boneless Chicken Breast are pounded and grilled.

    Taco Seasoning – This adds a great Mexican flavor to this dish. The chicken is covered with taco seasoning and pan-fried a bit before baking it with Salsa and Cheese.

    Tomato Salsa – You can use homemade Tomato Salsa or even use the store-bought ones. For the refreshing flavor, make it at home.

    Sometimes I also make use of my leftover Tomato Salsa from house parties, to make this recipe for my weekday meals

    Cheese – Cheddar adds a sharp, pungent earthy flavor in this Salsa Chicken which is loved by everyone at home. But if you want to add that gooey texture too, go for mozzarella.

    Parsley – At the end, baked chicken is garnished with finely chopped parsley, that adds a refreshing taste and a beautiful color on top.

    If you can’t find parsley in your nearby stores, use finely chopped cilantro instead. It works great too.

    Step By Step Recipe

    Preheat the oven to 375 Degrees F (180 Degrees C). Pound the chicken breasts to even thickness.

    Rub taco seasoning all over them.

    Heat a skillet and brush it with oil. Once the skillet is hot, transfer the chicken breast on to it and cook for 2 minutes on each side.

    Spread ½ cup of salsa in a baking pan.

    Remove the chicken pieces from the skillet and arrange them on the baking pan over the salsa.

    Top the breasts with the remaining salsa.

    Bake for 35 minutes until the chicken is done. Sprinkle cheese on top and bake for another 5 minutes.

    Garnish with parsley and serve hot.

    How to make homemade Tomato Salsa?

    Homemade Tomato Salsa is just the best! It is fresh and prepared with high-quality ingredients giving the recipe also a refreshing taste. Tomato Salsa is a delicious combination of tomato, onion, coriander, garlic, Jalapeno, olive oil, salt, black pepper, and lemon juice.

    What temperature do you bake your Chicken?

    I prefer to bake my chicken breasts at 375 degrees F. The chicken typically takes around 30 minutes to cook.

    After 30 minutes, I bake it for 5 minutes more, to melt the Cheddar Cheese on top.

    Can I use Chicken Thighs or Drumsticks instead?

    Yes, you definitely can! Follow the same process, however, just keep in mind that the thighs take a little bit longer to cook. 

    Can I use Fish Instead of Chicken?

    Yes, you can use fish fillets instead of Chicken, but the cooking time will differ. Fish generally takes very little time to cook.

    Slow Cooker Instructions

    Makingsalsa chicken in a slow cooker is even easier. If you have enough time in your hand, then you can try making this delicious Salsa Chicken in a slow cooker or crockpot.

    Put the partially cooked taco seasoning chicken in a slow cooker and cover it with salsa. Mix properly, until the chicken is covered with salsa.

    Cover the slow cooker and cook it for 4 hours on high or for 6 to 8 hours on low. Before 10 minutes, add the cheese and parsley on top. Cover and cook it again.

    Topping Ideas

    If you are planning to serve this Salsa Chicken on its own, then add some interesting toppings. Top it with,

    • Chopped Avocados, adds a creamy texture.
    • A different Avocado version, that is Guacamole
    • Varieties of Salsa
    • Hot Sauce, for that spicy kick
    • Sour Cream, my absolute favorite
    • Chopped Tomatoes and Cilantro

    Storage Suggestions

    You can refrigerate this delicious Salsa Chicken in an airtight container and it will last for up to 5 days in the refrigerator.

    If you have leftovers, you can also freeze it in an airtight container for about 2 months.

    Serving Suggestions

    There are endless options when we think about how to serve with this Salsa Chicken.

    Here are some of my favorites:

    • You can serve it on its own. The juicy flavor from the tomato salsa goes really well with the perfectly baked chicken.
    • Serve it on the bed of Spanish Rice/Cilantro Lime Rice and some Salad on the side. You can even add it to a Mexican Burrito Bowl.
    • Shred the chicken and stuff it inside Tacos, Burritos, or even Quesadillas. I often use my leftover Salsa Chicken to stuff in my Tacos, I just love the flavor it brings to them.
    • You can also serve it Mexican Cauliflower Rice or even with just plain Cauliflower Rice.

    Pro Tips By Neha

    While using Chicken breast, do not forget to pound them. This will help the chicken to cook more evenly.

    Here, I have used Tomato Salsa, as it tastes the best, but you can go ahead and experiment with other Salsa recipes too.

    You can even bake the Chicken without Taco seasoning, but it is highly recommended. It adds a delicious Mexican flavour, that perfectly complements the Tomato Salsa.
