Pasta salads are great as they beautifully combine the nutrients from the fresh vegetables with the much needs carbs from the pasta.
It comes together really well and this salad is going to keep you full for a longer time.

To make this pasta salad, we are going to start by cooking the pasta.
I’m using Penne Pasta for this recipe.
Firstly, water is heated in a large pot and brought to the boil.
To this, some salt is added and then the pasta is added and cooked till al dente.
It’s important to see to it that the pasta doesn’t overcook.
Once checked, the pasta is drained and transferred to a bowl.
The remaining ingredients like shredded purple cabbage, green olives, halved cherry tomatoes, crumbled ricotta cheese, olive oil, balsamic vinegar, salt and freshly cracked black pepper are all added in and tossed together well with the pasta.

Sicilian Pasta Salad is a refreshing and delicious summer salad which is loaded with flavours and is super easy to make.
- 300 g Penne Pasta
- 1/4 cup Extra Virgin Olive Oil
- 2 Tbsp Balsamic Vinegar
- 1 Cup Purple Cabbage Shredded
- 1/2 Cup Green Olives Halved
- 1/2 Cup Cherry Tomato Halved
- 1/4 Cup Ricotta Cheese Crumbled
- Salt to taste
- 1/2 Tsp Black pepper Freshly cracked
Heat water in a large pot and bring it to a boil.
Add 2 tbsp salt in the water.
Add Pasta and cook until Al Dente.
Drain and transfer the pasta to a bowl.
Add the remaining ingredients and toss well
Do Not over cook the pasta.
