Strawberry brownies are fudgy, super moist, dense, and chewy and have a nice tanginess from strawberries.
To make this pretty and elegant dessert, you are going to need some fresh strawberries, dark chocolate, and a few other pantry staples.
These brownies are perfect to serve for absolutely any occasion. I make these for house parties, high tea, potlucks, bake sale, school party, game day, or BBQ. These will also be great for baby showers or bridal showers.
It is great dessert to make for Valentine’s day too.

Ingredients

To make these brownies, you are going to need,
Strawberries – This brownie tastes best with fresh strawberries. Make sure you opt for nice and red strawberries. I will not suggest using frozen strawberries in this recipe as they will lose water when baked making the brownies soggy.
You can replace strawberries with raspberries, peach, blueberries etc
All-Purpose Flour – Here, we will use all-purpose flour, but you can also substitute it with whole wheat flour for a healthy alternative. The texture and taste will differ a bit.
Dark Chocolate – I have used dark chocolate as it renders the flavor that brownies should have.
Cocoa Powder – Opt for good quality cocoa powder for best taste. Low-quality powders can affect the taste of your brownies.
Unsalted Butter – Always opt for unsalted butter!
Other Ingredients – Other than these you will need granulated sugar, eggs, vanilla extract, and baking powder.
How to make Strawberry Brownies?
Preheat the oven to 350 Degrees F (180 Degrees C). Line an 8×8 inch baking tray with parchment paper. Allow some of the paper to hang on the sides of the pan. It will make it easier to pull out the brownie from the pan once baked.

Melt 4 oz (8 tbsp) unsalted butter and 6 oz (175 g) chopped dark chocolate in a non-stick skillet over medium heat. Keep stirring using a silicon spatula while melting.

Once melted, remove the skillet from the heat and let the mixture cool down a bit. Add 1 cup (7 oz) of granulated sugar and stir until combined.

Add 2 large eggs to the skillet and whisk using a wire whisk until combined.

Now add 1 teaspoon vanilla extract, ½ cup (2.2 oz) all-purpose flour, 2 tablespoon (0.35 oz) unsweetened cocoa powder, and ½ teaspoon baking powder and mix just until combined. Do not overmix otherwise the brownies will become tough.


Transfer the batter to the prepared baking tray.

Cut 8-10 strawberries into thin slices. Top the batter with the strawberry slices. For best result, press the slices in between 2 sheets of kitchen tissue to remove excess moisture and then arrange them over the batter.

Keep the tray in the middle rack of the oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove the tray from the oven and let the brownie cool down a bit. Pull them out of the pan by holding the excess parchment paper and cut into squares. Serve.

Frequently Asked Questions
To make eggless brownies, replace 2 large eggs with ¼ cup yogurt and follow the rest of the recipe as is.
To make vegan brownies, replace butter with vegetable oil and eggs with condensed coconut milk or yogurt.
Also, make sure you use vegan chocolate instead of regular dark chocolate.
Now that you have the best of both worlds – brownies and strawberries, let’s add some cream cheese to these rich and delectable brownies.
Whisk together 8 oz softened cream cheese and 4 oz softened unsalted butter in a medium bowl until creamy. Add 1 teaspoon vanilla extract and ¼ cup powdered sugar to it.
You can also add some strawberry jam to this mixture and spread this mix over cooled brownies and savor.
You can also make cream cheese strawberry glaze to pour over the brownies.
Whisk cream cheese and sugar together until smooth and add some mashed strawberries.
Add some water to get the spreading consistency, if needed. Top the brownies with this glaze and serve.
You can use it if folding it in the batter, frozen strawberries won’t taste great when placed on the top. I would recommend you to use only fresh strawberries for the same.
Strawberry Cake Mix Brownies
To make these brownies with a cake mix, pre-heat oven 350 Degrees F (180 Degrees C).
Stir together 1 box (15 oz) of chocolate cake mix, 2 large eggs, and ⅓ cup melted unsalted butter. Make sure there are no lumps.
Now pour this batter in the lined baking tray and top with strawberry slices.
Bake for 30-35 minutes until a toothpick comes out clean.
Remove the pan from the oven and let the brownie cool down for 15-20 minutes. Cut into slices and serve.
Serving Suggestions
Top strawberry brownies with vanilla ice cream or chocolate ice cream and serve as a dessert for your weekend brunch. Whipped cream or strawberry sauce also makes for a great topping.
You can also serve them in the evening with a hot cup of beaten coffee.
They are also perfect for gifting during Christmas, New Year or any other special occasion.
Storing Suggestions
Store these fudgy brownies tightly covered in a container for about 3 to 5 days in the refrigerator or at room temperature.
These strawberry brownies freeze well. Once it cools down, place them in a ziplock freezer bag and freeze for about 3 months. Thaw it overnight in the refrigerator before serving or reheating.
