    Are you like me and love casseroles for dinner? If so, this is an easy recipe, made from just a few ingredients, that is perfect for weeknight meals.

    Tater Tot Casserole, sometimes called Cowboy Casserole, is layers of deliciousness with creamy chicken, green beans, and soup with tater tots on top, all baked to perfection.

    When I make this recipe I change it a little. Instead of using traditional beef, I like to use chicken because it’s what my family loves and it’s healthier. It works either way so use what you like.

    Instead of layering every ingredient, I cook the ground chicken with the beans, cream of mushroom soup, and other ingredients except the tater tots. Doing it this way, the chicken gets a nice flavor and it won’t get dry while it’s baking.

    Once the chicken mixture is cooked, transfer it to a baking dish, top with the tater tots and bake it.

    The melted cheddar cheese in this casserole makes it so delicious! I’m sure your mouth will be watering when this casserole comes out of the oven and on to the table. Yum!

    This is a comforting weeknight meal that’s easy on the budget, takes little time to prepare and everyone will love. Three great reasons to give Tater Tot Casserole a try.

    Ingredients

    Ground Chicken – I prefer using chicken in my Tater Tot Casserole because that’s what my family likes, but you can make it with ground beef too. (You can also add some bacon if you like.)

    Green Beans and Corn – The fresh green beans and corn in this casserole add a great crunchiness along with making it healthy. You can add more of the veggies you like too.

    Tater Tots – You can either make your own tater tots or if you want to save time just buy readymade at the store.

    Cream of Mushroom Soup – The soup adds to the nice creamy texture of this casserole.

    Worcestershire Sauce – Worcestershire brings some salty, tangy zing to the dish.

    Sour Cream and Cheese – Extra creamy? Yes, please. Sour cream and cheese create an extra creamy and cheesy texture that makes this dish irresistible.  I think sharp cheddar tastes the best but you can use your favorite cheese.

    Other Ingredients – You’ll also need onion, garlic, and salt and pepper.

    Step By Step Recipe

    Preheat the oven to 375 degrees F. Add ground chicken to your pan.

    Now add the green beans, corn, cream of mushroom soup, sour cream, and cheese; mix everything well.

    Season with more salt and pepper.

    Transfer the mixture to a 9×13 inch baking tray and spread evenly.

    Arrange the tater tots on top of the mixture.

    Bake for 40-45 minutes or until the cheese starts to ooze. Remove from the oven and serve hot.

    What vegetables can I add to this casserole?

    You can add green beans, corn, peas, carrots, broccoli, or your favorite veggies to make this casserole wholesome and filling.

    Can I freeze this casserole?

    Yes, this casserole freezes well. You can prepare everything, put it in a freezer-safe pan and top with tater tots. Now, instead of baking it, cover it tightly with aluminum foil and freeze it for up to a month. Before serving, thaw it completely and bake it. Add a few more minutes to the usual baking time to make sure it’s done.

    • 250 gram Ground Chicken
    • ½ cup Onion (chopped)
    • 2 teaspoon Garlic (chopped)
    • 2 teaspoon Worcestershire Sauce
    • 100 gram Green Beans (chopped)
    • 100 gram Corn
    • 1 cup Cream of Mushroom Soup
    • ¼ cup Sour Cream
    • 1 cup Cheddar Cheese
    • 500 g Tater Tots
    • Salt (to taste)

      I just made it. I didn’t have all the ingredients so I used cream of chicken soup. Are frozen tater tots okay?
