Delicious  Thai Sweet Potato Curry

Step 1

 Heat oil Once the oil is hot. Add garlic, ginger, & sliced onions and saute for a minute.

Add Thai red curry paste & cook for 1-2 minutes on medium heat.

Step 3

Add vegetable stock and bring the curry to a boil.

Step 4

Now add sliced mushrooms, bean sprouts, & peeled and cubed sweet potatoes to the pan.

Step 5

Cover the pan with a lid and cook for 10-12 minutes on low heat until the sweet potatoes are tender.

Step 6

Remove the lid and add coconut milk, brown sugar, & tamarind paste, and cook for 2 minutes.

Step 7

Garnish with a handful of Thai basil Cilantro, and red chilies.

Serve hot with steamed jasmine rice.
