Cut the avocado in half vertically. Now rotate the two halves in the opposite direction and separate them from each other. Using a paring knife, remove the seed and discard it.
Now scoop out the avocado flesh and add it to the medium jar of a blender. Add the remaining ingredients to the jar and blend to make a smooth dressing.
Scrap the sides of the jar a few times while blending. Add some water if the dressing is thick for your liking. Check for salt and pepper and add more if needed. The dressing is ready.
