CAJUN  POTATOES

STEP 1

Add the potatoes to a pressure cooker along with water and salt and close the lid. Pressure cook for 1 whistle on high heat.

STEP 2

Smash each potato gently using a potato masher. Do not over smash otherwise they will disintegrate while frying.

STEP 3

Smashed Potato. Smash all the potatoes in a similar way.

STEP 4

Heat oil for frying in a pan over high heat. Once the oil is hot, add a few smashed potatoes to the pan and fry until lightly browned.

STEP 5

Now heat the oil once again on high heat and when it is very hot, fry the potatoes a second time.

STEP 6

Drain on a plate lined with kitchen tissue.

STEP 7

Mix mayonnaise, heavy cream, cajun seasoning, red chilli powder, and cumin powder in a small bowl and whisk well.

Ready dressing.

Transfer the fried potatoes to a serving platter. Top with dressing and garnish with chopped spring onion greens..
