Add cilantro, parsley, dried oregano, green onions, red onions, whole cloves garlic, red pepper flakes, and salt and pepper to the bowl of a food processor or a chopper.

Add extra virgin olive oil and pulse until everything is nicely minced. Do not over-mix. The sauce should be coarse in texture.

Add red wine vinegar, and the remaining extra virgin olive oil and mix well. Do not over mix otherwise, the sauce will become paste-y.

Adjust the salt, acidity, and heat as per your taste. Cilantro lime chimichurri is ready to use!
