Pre heat the oven to 350 Degrees F (180 Degrees C). Line a baking tray with parchment paper.
Whisk butter and granulated sugar until light and fluffy( Approximately for 2-3 minutes on medium speed).
Add egg, powdered sugar and vanilla extract and mix well.
Add the flour, baking soda and funfetti and mix to form a dough.
Scoop 1 tbsp of dough on the prepared baking sheet keeping a distance of 2 inches between each scoop.
Bake for 8-9 minutes until cookies are slightly browned from the sides. Remove the tray from the oven and transfer the cookies on a wire rack to cool completely.
Store these delicious cookies in an airtight container up to 5 days at room temperature. You can even freeze these cookies. Once the cookies have cooled completely, freeze them on a cookie tray for about 30 minutes. Next, toss the cookies into a ziplock bag and store in the freezer for about 3 months. Freezing for that first 30 minutes is important, as like this the cookies won’t stick to each other while freezing!
