Add water to a saucepan and bring it to a boil over high heat. Once the water comes to a boil, reduce the heat to low. Add ginger, cinnamon stick, and ground turmeric and simmer for 5 minutes.
Switch off the heat and remove the saucepan from heat. Add lemon juice and stir well. Add honey if you wish to.
Strain the tea into 2 teacups using a tea strainer.
