Add pineapple and garlic to the jar of a blender and blend to make a coarse mixture.

Step 1

Add the pineapple mixture to a heavy bottom pan. Add pineapple juice, rice vinegar, lemon juice, lemon zest, brown sugar, red pepper flakes, and salt, and mix well.

Step 2

Cover the pan with a lid and cook for 6-8 minutes on medium heat. Stir a few times in between.

Step 3

Mix cornstarch in water to make a thin slurry and add it to the pan.

Step 4

Cook uncovered until the sauce thickens (3-4 minutes), stirring frequently.

Step 5

Remove the pan from heat and let the sauce cool down to room temperature. Store in a glass jar in the refrigerator and use as desired.
