Add water and strawberries to a saucepan and bring it to a boil over medium-high heat. Once the water comes to a boil, reduce the heat to low and simmer for 2-3 minutes.
Switch off the heat and add loose green tea leaves (or tea bags) to the pan. Cover the pan with a lid and let the tea steep for 2 minutes.
Add honey and mix well.
Divide the remaining chopped strawberries in between 4 serving cups.
Strain the tea in the cups using a tea strainer and discard the cooked strawberries. Serve immediately.
