JAMBALAYA SOUP

STEP 1

Heat 3 tablespoon extra virgin olive oil in a large pot over high heat.

Add chicken breast (cut into ½ inch pieces) and chicken sausages (cut into thin slices) and saute for 3-4 minutes.

Add small red onion (peeled and diced) and chopped garlic and cook for 2-3 minutes. Stir a few times.

Now add green bell pepper, celery, Jalapeno pepper  and saute for another minute.

Add chicken stock, all-purpose flour, crushed tomatoes, uncooked white rice, cajun seasoning, bay leaves, salt & pepper and mix well.

STEP 6

Reduce the heat to low and cover the pan with a tight-fitting lid. Cook for 20-25 minutes until the rice is well cooked. Stir a few times during cooking.

STEP 7

Remove the lid and stir in shrimp (peeled and deveined). Cook for 5 minutes.

STEP 8

Serve the soup hot.
