Oven Roasted Sweet Potato Wedges

STEP 1

Chop off ½ inch from both the ends of the sweet potato using a large sharp knife.

STEP 2

Cut the sweet potato into half lengthwise.

STEP 3

Cut the half further into quarters. You will get 8 wedges from one large sweet potato.

STEP 4

Place sweet potatoes wedges in a large bowl and cover with cold water. Allow them to soak for just over 1 hour.

STEP 5

Drain the wedges and pat them dry using a dishtowel. Make sure to get as much moisture out as possible.

STEP 6

Toss the wedges cornstarch, light olive oil, Italian seasoning, garlic powder, smoked paprika, ground black pepper, and salt to taste.

STEP 7

Place in oven on a baking tray and bake for 15 minutes. Turn and bake again for another 15 minutes.

STEP 8

Set the oven to broil and broil for 3-4 minutes. Serve immediately with a dipping sauce.
