Place extra virgin olive oil, sesame oil, dark soy sauce, fish sauce, lime juice, Thai chili (chopped), lime zest, garlic clove (minced), grated ginger, finely chopped lemongrass stalk and palm sugar in a small food processor or high-speed blender and blitz until combined.
