Heat ghee in a pan.
Once the ghee is hot, add cumin seeds and let them crackle for a few seconds.
Add ginger and green chilli and fry for a few seconds.
Mash the potatoes roughly with your hands and add them in the pan
Add chopped palak.
Add salt and 2 cups of water and cook the curry for 10-12 minutes.
Slightly mash the curry while cooking.
Serve hot with Kuttu Ki Poori.
