Ingredients

  • 2 cups Cucumber Finely Chopped
  • 2 tsp Fresh Coriander Chopped
  • 1 tsp Green Chilli Finely Chopped
  • 2 tbsp Roasted Peanuts Crushed
  • 2 tbsp Fresh Coconut Grated
  • 1 tsp Sugar
  • Salt to taste
  • 1 tbsp Lemon Juice

For Tempering

  • 1 tbsp Vegetable Oil
  • 1/2 tsp Mustard Seeds
  • 10-12 Curry leaves

Instructions

  1. Add cucumber, coriander, chilli, peanuts and coconut in a bowl and mix well.

  2. Heat vegetable oil in a pan.

  3. When the oil is hot, add mustard seeds and curry leaves and let them crackle for a few seconds.

  4. Pour the tempering over the salad and mix well.

  5. Refrigerate the salad for a few hours.

  6. Add salt, sugar and lemon juice just before you want to serve it.
