Ingredients

  • 3 tbsp Gobindobhog Rice Use Regular Rice if it's not available
  • 2 tsp Ghee
  • 1 litre Full Fat Milk
  • 1/2 cup Sugar
  • 1 tsp Cardamom Powder
  • 10-12 Cashew Nuts Chopped
  • 10-12 Pistachio Slivered
  • 10-12 Almonds Slivered

Instructions

  1. Wash the rice and soak in 2 cups of water for 15-20 minutes.

  2. Drain the rice and mix it with ghee.

  3. Heat milk in a heavy bottom pan.

  4. Once the milk starts to boil, add the rice and cook on low heat until rice is nicely cooked and the milk has reduced to almost half.

  5. It will take 30-40 minutes.

  6. Keep stirring in between.

  7. Add sugar and cook for another 3-4 minutes.

  8. Add cardamom powder and mix well.

  9. Garnish with cashew nuts, pistachio and almond slivers.

  10. Serve hot or chilled.

Recipe Notes

Traditionally Gobindobhog rice is used to make Chaler Payesh but if it's not available, you can use any fragrant short grain rice.

Cook the Payesh on low heat and keep stirring in between.

Add the sugar only when rice is nicely cooked and at the end of cooking. Adding sugar before prevents rice from cooking.
