Ingredients

  • 2 tbsp Oil
  • 5-6 cloves Garlic
  • 1/4 cup Onion Thinly sliced
  • 4 tbsp Thai Red Curry paste
  • 1 small head Broccoli Cut into small pieces
  • 1 Carrot Cut into thin stripes
  • 1 Red bell pepper Cut into stripes
  • 100 g Mushrooms Sliced
  • 5-6 Baby corns Slit into half
  • 100 g Tofu Cut into cubes
  • 1 cup Thick coconut milk
  • 1 tsp Soy sauce
  • 1/2 tsp Sugar

Instructions

  1. Heat oil in a pan.

  2. Add garlic and fry for a few seconds.

  3. Add shallots and fry for a minute.

  4. Add red curry paste and fry for a minute or two.

  5. Add the broccoli, carrots, red bell pepper, mushroom, baby corn and tofu.

  6. Add coconut milk and a cup of water.

  7. Let the curry come to a boil.

  8. Simmer the heat and cook for 3-4 minutes.

  9. Add soy sauce, lemon juice, sugar and salt.

  10. Tear the basil leaves and add in the pan.

  11. Serve hot with Jasmine rice.
