Ingredients

  • 4 cups Watermelon Cubed and Chilled
  • 1/4 cup Cucumber Cut into small pieces
  • 2 tbsp Onion Thinly Sliced
  • 2 tbsp Roasted Peanuts Crushed
  • 2 tbsp Mint Leaves
  • 2 tbsp Thai Basil

For the dressing

  • 1 tbsp Fresh Lemon Juice
  • 1 tbsp Rice Vinegar
  • 1/2 tsp Fish sauce Optional
  • 1/2 tsp Ginger Grated
  • 1 tsp Brown Sugar
  • Salt to taste
  • 1/4 tsp Freshly Cracked Black pepper

Instructions

  1. Mix watermelon, cucumber and onion in a bowl.

  2. Mix all the dressing ingredients in another bowl.

  3. Pour the dressing over the salad and mix well.

  4. Sprinkle roasted peanuts, mint and basil on top.

  5. Serve immediately.

Recipe Notes

If Thai basil is not available, you can use regular Italian basil.
