True to its name, this one of its kind accompaniment, Raw Mango Kadhi Recipe is essentially a delight for all the mango fans out there!
Heat vegetable oil in a pan.
Once the oil is hot, add mustard seeds, fenugreek seeds, cumin seeds, hing, curry leaves and dry red chilli and let them crackle for a few seconds.
Add raw mango and fry for 2-3 minutes.
Cover the pan and cook the raw mangoes until they are softened.
Whisk besan with 1 cup of water to make a lump free batter.
Add the remaining water and mix well.
Add the besan batter in the pan once the raw mangoes are cooked.
Now add salt and turmeric powder and cook for 20-25 minutes on low heat until the kadhi thickens the besan is cooked well.
Add more water if the kadhi is too thick.
Heat ghee for tempering in a pan.
Once the ghee is hot, add curry leaves.
Switch off the heat and add red chilli powder.
Pour the tempering over the kadhi.
Serve hot with steamed rice.
