Spicy Indo Chinese Schezwan Egg Fried Rice Recipe is a delicious Chinese style spicy rice preparation which is very easy to make at home.
Heat 2 tbsp of oil in a wok.
When oil becomes hot, add ginger and garlic.
Saute for just few seconds.
Add celery, green chillies and onions.
Saute on high flame for 30 seconds.
Add capsicum, beans, cabbage and carrots.
Saute all veggies for 2-3 mins.
Don't overcook them.
Meanwhile, break eggs in a bowl and whisk them with 1/2 tsp pepper and salt.
Heat 1 tsp oil in another pan and add eggs to it.
Scramble the eggs and keep aside.
Now, in the veggies wok, add rice, shezwan sauce, soy sauce, Vinegar, brown sugar, salt and pepper.
Toss everything nicely to coat the rice with all the sauces.
Check for salt , spiciness and sourness. Adjust the sauces as per your taste.
Mix in scrambled eggs to the rice.
Switch off the flame.
Add chilli sesame oil in the end for added flavour.
Garnish with spring onion greens.
You can add any vegetable of your choice in this recipe.
