Ingredients

  • 2 tbsp Oil
  • 1/2 cup Tomato Chopped
  • 2 tbsp Tomato Puree
  • 1/2 tsp Turmeric Powder
  • Salt to taste
  • 1 tsp Brown Sugar
  • 200 ml Coconut Milk
  • 1 Kaffir Lime Leaf
  • 1/2 tsp Sugar
  • 3-4 slices Pineapple Chopped
  • 10-12 Jumbo Prawns Cleaned

To grind into a paste

  • 3-4 Dry Red Chillies
  • 2 tsp Lemon Juice
  • 3-4 stalks Lemon Grass
  • 1/2 inch Galangal Use ginger if galangal is not available
  • 3-4 cloves Garlic
  • 1 cup Onion Chopped
  • 1 tsp Thai Fish sauce

Instructions

  1. Heat oil in a pan.

  2. Add the paste made with the above ingredients.

  3. Cook for 3-4 minutes.

  4. Add chopped tomato and tomato puree.

  5. Cook for 2-3 minutes.

  6. Add turmeric powder, salt, brown sugar, coconut milk, kaffir lime leaf and sugar and cook for 2-3 minutes.

  7. Add pineapple pieces and prawns and cook for 5-6 minutes.

  8. Garnish with chopped kafir lime leaf, coriander and chopped red chilies.

  9. Serve hot with rice.
