Kaddu Raita, Pumpkin Raita or Indian Pumpkin Yogurt Recipe is an easy to make accompaniment that goes very well with Indian meals.
Boil 3 cups of water in a pan.
When it comes to a rolling boil, add the grated pumpkin and cook for 4-5 minutes.
Strain the pumpkin and let it cool for sometime.
Whisk the curd in a bowl.
Add salt, roasted cumin powder, red chilli powder, fresh coriander and green chilli and mix well.
Add the cooked pumpkin and mix well.
Garnish with coriander, chilies and red chilli powder.
