When the ghee is hot, add sooji and fry till sooji turns light golden brown.
Add cashew nuts, almonds and raisins.
Fry until sooji turns nicely golden brown.
Keep stirring constantly.
Add water and cook on low heat till all the water is absorbed by sooji and sooji is softened.
Add sugar and cook for 2-3 minutes, until sugar melts and the halwa is slightly brownish in color.
Garnish with slivered almonds and pistachios.
Use the fine variety of Sooji, to make a smooth halwa.Make this halwa only in ghee. Oil doesn't work well in this recipe.Roast the Sooji in ghee on low heat till it becomes aromatic and slightly golden brown. Don't roast it on high flame, as it might get burned.Water should be hot while adding to the Halwa.Make sure that the Sooji is roasted well, otherwise, the Halwa won't taste good. You can use grated jaggery instead of sugar to make this halwa. It will be healthier and richer in taste.Add some cardamom powder or crushed cardamom for a nice flavor. You can add milk instead of water to make this halwa even richer.
