Ingredients

  • 4 Flour Tortillas
  • 4 tbsp Pizza Sauce
  • 2 cups Cheddar Cheese Grated
  • 2 cups Mozarella Cheese Grated
  • Olive Oil For brushing on top

For the filling

  • 2 tbsp Olive Oil
  • 2 tsp Garlic Chopped
  • 2-- g Mushroom Chopped
  • 1 Red Bell pepper Chopped
  • 1 Yellow Bell Pepper Chopped
  • Salt to taste
  • 1 tsp Dry Oregano
  • 1 tsp Dry Rosemary
  • 1 tsp Dry Thyme

Instructions

For the filling

  1. Heat olive oil in a pan.

  2. When the oil is hot, add garlic and fry for a few seconds.

  3. Add mushroom, red bell pepper and yellow bell pepper.

  4. Fry on high heat for 3-4 minutes.

  5. Add salt and dried herbs.

  6. Fry for a minute.

  7. Remove the pan from heat.

  8. Let the filling cool a little bit.

For assembling

  1. Heat a griddle.

  2. Keep a flour tortilla on the griddle.

  3. Apply 1 tbsp of pizza sauce on the tortilla.

  4. Keep some cheddar cheese on one half of the tortilla.

  5. Top with some filling.

  6. Top the filling with some Mozzarella cheese.

  7. Fold the tortilla into half.

  8. Brush little olive oil on the tortilla and turn it over.

  9. Brush olive oil on other side as well.

  10. Press the tortilla with the back of a ladle and cook till it is slightly browned and the cheese inside is melted.

  11. Serve hot with sour cream .
