Ingredients

  • 1 and 1/2 cup Pecan Use walnuts if pecans are not available
  • 3 cups All purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1 cup Unsalted butter
  • 1 cup Brown sugar
  • 1 cup Granulated sugar
  • 4 Eggs
  • 1 tsp Vanilla extract
  • 1/4 cup Dark rum
  • 1 cup Milk

Instructions

  1. Pre heat the oven to 180 degrees C.
  2. Grease and dust a bundt pan.
  3. Transfer the pecan on a baking tray and toast them for 3-4 minutes.
  4. Remove from the oven and chop into small pieces.
  5. Keep aside.
  6. Mix all purpose flour, baking powder, baking soda and slat in a bowl and keep aside.
  7. Whisk butter, brown sugar and granulated sugar in a bowl until lightly and fluffy. ( approximately 4-5 minutes using electric whisk )
  8. Add eggs, one at a time and whisk well after each addition.
  9. Add vanilla extract and rum and mix well.
  10. Now add flour mixture in 3-4 addition and mix gently.

  11. Keep adding milk after every addition of flour.
  12. Gently fold the pecans in the batter.
  13. Pour the batter in the prepared pan.
  14. Bake for 55-60 minutes, until a pick comes out clean.
  15. Remove the pan from the oven and let the cake cool for sometime.
  16. Transfer the cake on a wire rack and cool completely.
  17. Cut the cake into slices and serve.
