Ingredients

  • 300 g Tortilla Chips
  • 1 cup Refried beans
  • 1/2 cup Corn kernels
  • 2 cups Cheddar Cheese Grated
  • 1 cup Gouda Cheese Grated
  • 2 tbsp Jalapeno Sliced
  • 1/2 cup Tomato salsa
  • 1/2 cup Sour cream
  • 1/2 cup Guacamole
  • 2 tbsp Fresh coriander

Instructions

  1. Pre heat the oven to 400 Degrees F (200 degrees C).

  2. Place half of the tortilla chips on a 9x13 inch baking tray.

  3. Top with half of the refried beans, corn kernel, cheddar cheese and gouda cheese.

  4. Top with remaining tortilla chips and beans, corn and cheese.

  5. Put the tray in the oven and bake for 5-6 minutes until the cheese is melted.

  6. Top with jalapeño, tomato salsa, sour cream, guacamole and fresh coriander.
  7. Serve immediately.

Recipe Notes

To make a basic tomato salsa, chop tomato, onion, Jalapeno and cilantro and mix them well. Add lemon juice and salt and let the salsa sit for an hour. I have a delicious Roasted Tomato Salsa recipe on the blog which will go beautifully on Nachos. You can try it too.

To make Guacamole, remove the skin and seed of avocado and lightly mash the fruit with your fingers. Add chopped onion, tomato, minced garlic, cilantro, green chilli, salt, roasted cumin powder and lemon juice and mix well. Here is a detailed Guacamole Recipe for you all.
