Loaded with the goodness of spinach as well, Spinach Oats Khichdi is a perfect meal option on days when we wish consuming something light yet homely.

Ingredients

  • 1 cup Oats
  • 1 cup Dhuli Moong Dal / Split Yellow Lentil
  • 2 tbsp Vegetable oil
  • 2-3 Clove
  • 2 inch Cinnamon
  • 4-5 Black peppercorns
  • 1 tsp Cumin seeds
  • 1/4 tsp Hing
  • 3-4 Dry red chillies
  • 1/2 cup Onion
  • 1 tsp Ginger Grated
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 2 cups Spinach Chopped

Instructions

  1. Heat vegetable oil in a pressure cooker.
  2. Once the oil is hot, add cloves, cinnamon and black peppercorns and fry for a few seconds.
  3. Add cumin seeds and heeng and let them splutter for a few seconds.
  4. Add dry red chillies, onion and ginger and fry until onion turns translucent.
  5. Now add oats and dhuli moong dal along with 6 cups of water, turmeric powder, salt and spinach.

  6. Pressure cook the Khichdi until done. ( Approximately 1 whistle on high heat. Then simmer the heat and cook for 2 whistles on low heat )
  7. Remove the pressure cooker from heat and let the pressure release.
  8. Serve Khichdi with a dollop of ghee, papad and raita.
