Ingredients

Pumpkin

Red onion
Thinly sliced

Rosemary

Extra virgin olive oil

Balsamic vinegar
Salt to taste

Freshly cracked black pepper
Instructions
Pre heat the oven to 200 degrees C.
Peel the pumpkin and cut it into small cubes.
Transfer the pumpkin into a baking tray along with red onion and rosemary.
Sprinkle salt and pepper on top.
Spray the pumpkin with extra virgin olive oil.
Add balsamic vinegar and toss everything.
Bake for 35-40 minutes until pumpkin is softened.
Toss the pumpkin in between roasting once.
Serve hot
