Dahi wala pulao is a delicious recipe which brings out the aroma of many spices.

Ingredients

For the Rice

  • 2 cups Long grain Basmati Rice
  • 2 Bay leaf
  • 3 - 4 Cloves
  • 3 -4 Black peppercorn
  • 1 inch Cinnamon
  • Salt to taste

For the Vegetables

  • 1 cup Yogurt
  • 2 cups Mix vegetables I used a mix of carrot, beans, peas and potato
  • 1/4 cup Water
  • Salt to taste
  • 1/2 tsp Turmeric powder
  • 3 tbsp Ghee
  • 1/2 tsp Shahi Zeera
  • 1 cup Onion
  • 2 tsp Ginger garlic green chili paste
  • 1/2 tsp Garam masala powder

Instructions

For the Rice

  1. Wash the rice and soak in enough water for 30 minutes.
  2. Drain the water.
  3. Add rice, bay leaf, cloves, black peppercorns, cinnamon and salt in a pan.
  4. Add 4 cups of water and cover and cook on low heat till rice is 80 % done.

For the Vegetables

  1. Heat 1 cup water in a pan.
  2. Add salt and turmeric powder and the vegetables.
  3. Cover and cook on low heat till vegetables are slightly done and the water is evaporated.
  4. Heat ghee in a pan.
  5. Add shahi zeera and let it crackle for a few seconds.
  6. Add onion and fry till it turns transparent.
  7. Add ginger garlic green chilli paste, garam masala, salt and cook for 3-4 minutes.
  8. Add whisked yogurt and cook for another 3-4 minutes.
  9. Add boiled vegetables and cook for another 3-4 minutes.

Assembly

  1. Transfer half of the rice in a heavy bottom pan.
  2. Top with the vegetable mixture.
  3. Cover with the remaining rive.
  4. Pour the liquid left from the vegetables over the top of the rice.
  5. Cover the pan tightly and cook the pulao on very low heat for 10-12 minutes.
  6. Remove the pan from heat and let the pulao rest for 5 minutes.
  7. Fluff the pulao gently with a fork.
  8. Serve hot with Raita.
